Flowers can come three ways; sugar, silk or fresh. Silk flowers are artificial, and can be bought from many cake or florist stores. They are very easy to work with, and to reuse, but can look quite fake. Fresh flowers add an instant wow, and can be perfectly matched to the rest of the wedding flowers. However certain types of flowers, such as lillies, are poisonous and cannot be used on cakes. Sugar flowers are handmade from flowerpaste, a very pliable sugarpaste that dries hard and brittle. This can be manipulated and coloured, and if made by a good sugar artist the flowers are indistinguishable from real ones until you take a close look.

Once you have your top three bakers in mind, set up appointments to meet in person, ask them key questions and check out their portfolios. You'll discuss the time and place of the wedding, the degree of formality, the colors and other wedding details that might inform your cake. Don’t forget to bring examples of cakes you love or even swatches of fabric, art, color combos and more that could inspire the end result.
I find making sugar flowers calming, there's simething quite zen about the repetetive task of making petals, and it gives a great sense of achievment, but it does take some time. If making your own flowers it's best to start early. The cake I made uses my friend's favourite flowers, poppies, made from sugar, and making 12 of these took me a good couple of days. The method for the poppies can be used for other open petalled flowers, such as open roses and anemones.

To prepare the cake tin for baking, lay it onto a sheet of baking parchment and draw around the base, then cut out the circle. Cut a long strip of parchment a little taller than your tin. Fold over one long edge of this and cut slits every inch or so. Grease the tin and line the sides with the long strip, laying the flaps on the bottom of the tin. Cover the bottom with the circle. Once fully lined, do this all over again. Double lining the tin will prevent leakage, and give a little extra insulation to the cake.

Our wedding is a diy affair. The cake is going to be my fellas job. He’s an engineer, so wants to build a crane that will be lifting the top teir inti place/hovering it above the rest of the cake. It’s a chance for him to put his personality onto something. He also wants to use his new laser cutter to design and make a bespoke topper. Sugar flowers will always cost more than fresh flowers.  Why?  Because they are very time consuming to make, and require a skilled hand, with knowledge on how to construct, wire, etc. a beautiful looking flower made from sugar!  Sugar flowers can start at about $15 per flower – the more complex the flower design, the higher the price.  As much a I love, love, love sugar flowers on a cake, most couples do not have the budget to spend $200-300 on just sugar flowers alone, I get it!  So, unless you do, opt for fresh flowers instead.
Have fun dressing up your cake table: Drape it with a pretty tablecloth and decorate it with old family wedding photos, candles or flowers (your florist can help). It doesn’t need to be over the top, but don't be afraid to showcase your masterpiece if that’s what you want. For a ballroom wedding, place the cake on a tall, traditional cake stand; go for a wood platform covered in fresh flowers for a spring garden wedding; or try a sleek, clear acrylic stand for an urban loft wedding. Whilst wedding cake suppliers in London, Surrey and the south tend to have higher prices than those in the north of the country, the location of your wedding shouldn’t necessarily effect the price of your order either. However, if you’re set on hiring a wedding cake maker who lives a long way from your wedding, then you should of course expect an extra fee for delivery or travel.
