Once you have your smooth surface you can take care of any flaws that are left. Marks and cracks in the icing can be hidden by taking a small ball of icing, dipping it in some cornflour or icing sugar, and rubbing it over the problem area. The icing sugar will fill the crack and blend it into the surface, smoothing it out. Other marks such as cake smears or food colouring can often be removed by brushing on a little clear alcohol, such as vodka, and then rubbing lightly with some kitchen towel. Once the liqour has dried smooth out the surface again.
Your cake doesn't have to be round, vanilla, white or tiered if you don’t want it to be—in fact, your options are pretty much endless. To nail down a design you love, look to your venue, the time of year and, of course, your personal style. If it's a rustic fall wedding, you might go for a clean, earthy palette and a perfectly undone look (maybe something half-naked with buttercream and richly colored berries). For a modern loft wedding, you might choose a streamlined cake with asymmetrical tiers and a graphic design. As you're deciding on a look and flavors, take our fun Style Quiz, browse real wedding cake photos and save your favorites to show your baker.
When you’re budgeting over £1,000 for a wedding cake, you should expect something spectacular and the team at Ann’s Designer Cakes agree: “This price range takes wedding cake designing to a whole new level. Clients should expect to receive two consultations; one initial meeting to discuss their requirements whilst tasting a range of cake flavours, followed by a second to view the cake design we’ve created and finalise the details.

Take a 30 gauge wire, dip it in edible glue, and carefully insert this into the raised ridge. Gently pinch the edges of the petal to give them a little realistic frill. If you have a petal veiner, lay the petal in the venier and press down firmly. This will give the petal veins and contours to make it more realistic, This can also be acheived with some patience and a thin modellling tool.

For a bride on a budget, paying a large sum of money for a wedding cake may seem completely outrageous. But what are the alternatives, particularly when you don't have any baking experts in your family? Turns out, making a wedding cake is not as difficult as one might think. There is some significant planning and effort that will need to happen, so make sure you carefully weigh the expense of a cake versus your time (and expectations) as you make your final decisions. And if the cake isn't your thing, you can always serve pie, ice cream, or even an ice cream sundae bar at your wedding.
Choosing a wedding cake is a big deal. Flavors, fillings, frosting and decorations must all be carefully considered, along with things such as venue, budget, and even climate. Before you place your order, we encourage you to make an appointment for a consultation with one of our wedding cake experts for help in selecting the perfect size, flavor, and décor for your big day.
When most of the tots his age were making messes in the sandbox, pastry genius Ron Ben-Israel preferred to observe his Viennese mother’s culinary magic as she whipped egg whites into frothy meringue or transformed flaky crust into ethereal apple strudel. “I was enchanted,” he gushes. “Watching a fruit reduction become a gelée was fascinating. But I certainly wouldn’t have guessed that the art and science of baking would become my life’s passion.”

Another way to save money on your cake is to skip an outer layer of frosting. Naked cakes are not only gorgeous to look at, they're actually pretty practical too. They're a lot less expensive because they use less buttercream and take less time—it's as simple as that. To make up for the lack of frosting on the outside, up the wow factor on the inside by experimenting with unique flavors and fillings, like lemon curd, champagne buttercream or chocolate ganache with toasted almonds.

The collections of trendsetting cakes have been featured in countless books, TV shows, films and publications and can also be spotted in many of New York’s premiere hotels and venues. The bakery received additional acclaim in 2011, when Ron became host and judge of the Food Network’s hit show Sweet Genius for three seasons, which has since been syndicated around the world, as well as a judge for three seasons on the FN’s show Cake Wars as well as several holiday specials.

Lastly, don’t forget that there will be a delivery charge to deliver your cake to the venue.  How much that fee will be, depends on the location of your venue from our bakery.  The further we have to travel, the higher your delivery cost will be.  In some cases, it’s not only the distance we have to travel, but the time it will take to make the delivery – traffic, difficult roads, lack of parking, etc.  I would say our average delivery fee is about $50-65, with locations such as Santa Barbara and Los Angeles being $100-150+.  When you consider how stressful a wedding cake delivery can be, getting the cake to the venue on time, battling the heat, the weight of the cake, and the fact that they are flat out awkward to handle, you should always opt for delivery…let the professionals do what they do!
Almost as much as Ron loves baking, he thrives on teaching. He spends over 30 days a year wearing his professor toque. Ron also leads workshops, master classes and personally appears at industry events around the world, including Sugar Salon Paris, Cake Design Festival Milan, LA Cookie Con in Los Angeles, America’s Cake Fair Orlando, Cake & Bake Masters Mexico City, Tendencias in Cartagena, Columbia and many others.

Increasing your wedding cake budget to £1,000 will buy you even more design work and attention to detail. Sugar High Cakes say: “For this price you can expect most four tier cakes and some simpler five tier cakes to be on offer. These cakes will usually include some time-consuming elements such as extensive fondant fabric effects, hand piping designs or hand-painted elements.”
In today's contemporary world, wedding events are not simply performed in the church. A lot of concepts had come up in regards to wedding celebration venues. If ever before you have any kind of plans of having your wedding celebration by the beach or anywhere else where it is open, it would be better to inform your baker concerning this.
i used them for a baroque wedding cake i made a few months ago. it was a four-tiered rectangular cake (each stack placed at different angles atop one another) and was covered in fondant painted in gold/red stripes. then i placed the poppies around the corners of the tiers. they weren't as vivid as yours though :( - ill try making them with red gumpaste/fondant next time.
Passion, indeed. Ron is fervent when he talks about baking and creating his extraordinary confections. His dedication to his art is both reverent and joyful at once: Each time he fashions a cake—and he’s designed thousands of stunning, one-of-a-kind gateaux in his career—he’s as thrilled as he would be if it were his first masterpiece. As Ron cheerily observes, “Each cake is like a performance—my team and I feel like we are attending countless opening nights every weekend.”
The tiers should reflect the number of guests you would like to feed, as well as personal preference. This is another of the often overlooked hidden costs attached to a bigger guest list. Expect to pay more not just for your venue hire and wedding breakfast themselves, but also for larger cakes, more table centres and additional bottles of wine too.

Will a faux cake or a faux tier save you money on your wedding cake?  I’m sorry to say, but the answer is no.  It seems like having a chunk of Styrofoam vs. a piece of delicious cake should cost less.  I know logically, it sounds like it should.  So in an effort to dispel that myth, I will explain why it’s not the case.  A faux tier, or cake dummy, as we call them, costs about the same it does to bake the actual cake.  So, no cost savings there.  Second, I personally find cake dummies more difficult to work with then real cake, so I’m my opinion, it actually takes longer to decorate them then it does real cake.  So the time that it typically takes to decorate can actually be longer, which means, you guessed it, no cost savings there either!
The great thing about elegant wedding cakes is that they fit in with most people's wedding plan or theme. Like the story of Goldilocks and the three bears, elegant cakes aren't too hot or too cold, they are ......just right. Ask any young bride, if they were looking for something elegant in their choice of anything - whether it be gown, cake or even groom - and the answer would be a resounding but graceful yes!
