The starting price of a wedding cake can vary depending on the type of frosting you prefer. Cakes covered in fondant, a sugary paste-like icing, tend to cost more than cakes covered in buttercream (frosting made from butter and sugar). Fondant is more durable than buttercream (and it won’t melt in the summertime!), but it’s generally thought of as less tasty. The starting price of a fondant wedding cake is usually about $5 per slice, while the starting price of a buttercream wedding cake is about $4 per slice. Again, these wedding cake prices will vary even more based on decorations, size, etc.
What about a sheet cake? We do offer sheet cakes, and they are a great way to supplement cake servings, without paying for a huge tiered cake with 250 servings. What I mean by that is, if your guest count is 250, order a smaller tiered cake (the most common size cake we bake is a 3 tier with 80 servings & shown in the photo above) and then supplement the rest of your cake servings with sheet cake. Sheet cakes are basic frosted cakes, delivered to the kitchen, cut by catering staff, and never seen by guests, therefore they cost less per serving then a tiered cake. Keep in mind, that we will only make sheet cakes for wedding clients ordering a two tier or larger cake from us.
Tone down what costs the most – In the wedding cake industry, think about what costs the most money. First and foremost it time. Do not have any extra flowers or decorative features on the cake. Keep it simple but just having a colored ribbon around the cake. Next, do not have any fillings and fillings are extra time and cost for the filling. Last, only plan a cake size for the exact number of planned attending guests and one piece for each.
Next work out how you will dry the flowers. The flowerpaste will take a few hours to dry out enough to not lose it's shape (longer if the room is humid). It is often best to dry flowers hanging upside down so the petals fall nicely, though this does depend on the type of flower. To do this bend the end of the wire a little and hang them off whatever you have handy. The could be a rail, jewellery stand, tacked up piece of string or my latest discovery, a martini glass.
Planning your time can affect everything about your cake, right down to the flavour. Filled sponge cakes are best baked as close to the day as possible, and baking enough for a couple of tiers can take a lot of hours in mixing, baking and cooling. Opting for a traditional fruit cake, on the other hand, allows you to make the cake in advance. In fact this is preferable since an important step in making fruit cake is feeding it with a regular spoonful of brandy or sherry every few days for at least a couple of weeks, to make it gorgeously moist and alcoholic.
