Once the flowers are made and the cakes are covered the whole thing can be assembled. Even if you are transporting the cake to another venue and assembling it there, it is best to do a dry run first to check how everything will look. Start by wrapping a length of ribbon around the edge of the board and the bottom of each tier. Secure the ribbon to the board with a couple of pins, and to thecakle with some edible glue or royal icing. This instantly neatens up any dodgy edges.

I love the idea of decorating our own wedding cake. I am very crafty and making lots of decorations for our big day. If I was to win this competition I would paint my own bride and groom peg dolls and have mr and Mrs bunting on top. So what if you don’t know your final guest count yet? Like catering companies and rental companies, they often don’t ask for your final guest count until a week or two before your wedding. However with wedding cakes it can be a bit different, so talk to you baker about how they want to estimate this. But if we’re going by the general rule of thumb that 20% of your wedding guests will RSVP ‘No’, than planning to order enough cake for 120-130 people (rather than 150) will help your estimate AND your budget.
Tone down what costs the most – In the wedding cake industry, think about what costs the most money. First and foremost it time. Do not have any extra flowers or decorative features on the cake. Keep it simple but just having a colored ribbon around the cake. Next, do not have any fillings and fillings are extra time and cost for the filling. Last, only plan a cake size for the exact number of planned attending guests and one piece for each.

Ordering fewer tiers can save you pounds. Just having a two-tier cake instead of the traditional three could save you almost £200! Choosing a medium and small tier will also help with the budget, it’s the larger tiers that are the most expensive. If you need more cheap wedding cakes for your guests you can also order cutting bars, which work out cheaper than that extra tier.

Although I have provided the recipe I used, as long as you end up with roughly the same total weight at the end you can alter the proportions to your taste. A 100 tiered cake would be a combined 3-tier cake. Going by the formula above, you professional wedding cake would be a minimum of $150 for 100 people. But let’s be real. Depending on what you want most professional wedding cake bakers will charge more than $1.50 per slice just for the sheer time to bake and frost a 3-tier cake.
