You might not get tons of tiers, intricate patterns or realistic-looking sugar flowers, but if you love your local bakery, ask if they'd be willing to make your wedding cake. Because they're not a wedding-specific bakery, you may have more limited design choices—but the savings can be big. Otherwise, ask your caterer if they include cakes in their packages. Sometimes if you order your cake from your caterer, the overall cost will be lower. Some caterers even require you to use them, and if you don't, they'll charge a fee for bringing in another baker. So do a little cost comparison to snag the best deal.
For this particular cake, both the flowers and the cake can be mad quite far in advanc, which removes a lot of stress from the weddng week itself. Like all traditional fruit cakes the cake is made in advanced and soaked in small amounts of liquor ( I used brandy) over a few weeks or months. This will be familiar to anyone who has made a christmas cake.
You should use a recipe specifically designed to be a wedding cake as it will ensure that it is sturdy enough and that it makes the right amount of batter and icing. For a three-tier cake, you need to make three cakes of 12", 9" and 6", as well as a massive amount of icing. If you still want the cake to look like it has several layers then ask the baker if they will decorate a false tier (normally a box or polystyrene)- then you are saving money, but you will still be paying for the decoration which is the most expensive bit as it takes the longest. One of the cheekiest cheap wedding cake ideas is having a secret section within a fake cake that you can cut into making it look like you have the real thing!
The base of any fruit cake recipe is the fruit mix. The cake batter is essentially just there to hold all of the dried fruit together. Although I have provided the recipe I used, as long as you end up with roughly the same total weight at the end you can alter the proportions to your taste. In this recipe I was short on mixed peel and currants, but bulked up with dried apricots scrounged from my baking cupboard. It's a very flexible type of cake.

While I'd love to go into  the many options of cake decorating, right now I don't have the time, so just a brief mention of royal icing. This is made using icing sugar and egg whites, or from a pre bought mix, and is a pipeable icing that dries very hard. It can be coloured before piping, or painted after, and is great for adding detail such as beads and borders to cake. While I used none on the poppy cake, a sprinkling of piped pearls or a bead border around the top edge can be great for covering up flaws and cracks in the icing, while enhancing the overall look of the cake.
What about a sheet cake?  We do offer sheet cakes, and they are a great way to supplement cake servings, without paying for a huge tiered cake with 250 servings.  What I mean by that is, if your guest count is 250, order a smaller tiered cake (the most common size cake we bake is a 3 tier with 80 servings & shown in the photo above) and then supplement the rest of your cake servings with sheet cake.  Sheet cakes are basic frosted cakes, delivered to the kitchen, cut by catering staff, and never seen by guests, therefore they cost less per serving then a tiered cake.  Keep in mind, that we will only make sheet cakes for wedding clients ordering a two tier or larger cake from us.
Whilst the size of your wedding cake will be a factor in the pricing, the one thing which will have the most impact on how much your wedding cake costs you is the design you choose. Naked and semi-naked wedding cakes involve much less work than fondant and handmade sugar flowers, and the time that the cake takes to be made is closely connected to the price the supplier will charge.
Be prepared to pay anywhere from $2 to $20 per slice. Naturally, the more complicated the cake, the more you'll pay. Fondant is generally more expensive than buttercream, and if you want elaborately molded shapes, vibrant colors or handmade sugar flowers, you'll pay for the cake designer's time and labor. One cost-cutting option is to order the cake of your dreams made on a small scale for a price you can comfortably afford, and then order sheet cakes of the same flavor to be cut in the kitchen (some but not all designers will do this). Bottom line: Once you find your baker, you'll want to work with them to come up with a wedding cake design that falls within your budget.

Flowers can come three ways; sugar, silk or fresh. Silk flowers are artificial, and can be bought from many cake or florist stores. They are very easy to work with, and to reuse, but can look quite fake. Fresh flowers add an instant wow, and can be perfectly matched to the rest of the wedding flowers. However certain types of flowers, such as lillies, are poisonous and cannot be used on cakes. Sugar flowers are handmade from flowerpaste, a very pliable sugarpaste that dries hard and brittle. This can be manipulated and coloured, and if made by a good sugar artist the flowers are indistinguishable from real ones until you take a close look.
Will a faux cake or a faux tier save you money on your wedding cake?  I’m sorry to say, but the answer is no.  It seems like having a chunk of Styrofoam vs. a piece of delicious cake should cost less.  I know logically, it sounds like it should.  So in an effort to dispel that myth, I will explain why it’s not the case.  A faux tier, or cake dummy, as we call them, costs about the same it does to bake the actual cake.  So, no cost savings there.  Second, I personally find cake dummies more difficult to work with then real cake, so I’m my opinion, it actually takes longer to decorate them then it does real cake.  So the time that it typically takes to decorate can actually be longer, which means, you guessed it, no cost savings there either!
